White Chicken Chili with Collard Greens

White Chicken Chili with Collard Greens


3 chicken breasts

2 tablespoons olive or avocado oil

1 onion, chopped

4 cloves garlic, minced

2 cans navy beans or cannellini beans

1 jalapeño, chopped, ribs and seeds removed to lower heat level

1 poblano chili, chopped

1-2 tablespoons cumin

1 1/2 tablespoons ground coriander

1 bay leaf 

1 quart chicken stock

1 bunch collard greens, rinsed and chopped


  1. 1. Poach the chicken breasts in salted water until done.
  2. 2. In a heavy-bottomed pot, heat the oil. Sauté the onion and peppers until the onions are translucent. Add the garlic and cook for 1 minute.
  3. 3. Toss in the coriander and cumin, cook until fragrant. Add beans, chicken, greens and stock. Allow to come to a boil. Reduce heat to medium-low and let simmer. Use salt and pepper to taste at this time. Let simmer for at least 30 minutes. 
  4. 4. Serve hot with cilantro and lime.
